What we eat and how we eat hugely impacts the environment. The food system contributes to over 30% of global greenhouse gas emissions. Inefficiencies within the system are a significant source of waste: one third of food produced globally — approximately, 1.3 billion tons of food — is wasted every year. Our individual and collective food choices can directly improve planetary health.

Hear Elaine Chu talk about her personal journey toward action in food sustainability, projects she has completed in the workplace, and three ways to eat for wellness and planetary health:

About the speaker

Elaine Chu wears many hats within Fraser Health: she is a Registered Dietitian, and the Regional Manager of Food Operations at Royal Columbian Hospital and Eagle Ridge Hospital, and Chairperson of the Lower Mainland Sustainable Hospital Food Operations Committee. She is also a Green+Leader.
